     Shitake Stir Fry

Ingredients
3 oz fresh shitake mushrooms sliced
1 T oil
2 eggs
2 lg carrots thinly sliced
1 med onion sliced
1/2 c veg broth (chicken)
2 tsp minced garlic
2 tsp minced ginger
1 T soy sauce
 
1/4 tsp salt
1/2 c edamame
1 tsp cornstarch
2 T cold water

Instructions
Heat wok and add oil carrots and onion. Saute for 4-5 min. Add mushrooms broth ginger garlic soy sauce and salt. Bring to a simmer and stir in edamame. Return to simmer and coo 5 min stirring ofter. Mix cornstarch with water and thicken cooking 30 seconds or so.
