     Potato-Bacon Frittata

Ingredients
1-1/2 Tbs Butter
1 Cup frozen of fresh shredded Potatoes
1 Tbs chopped onion
4 large eggs
1 Tbs milk
salt & pepper
1/2 Cup shredded cheddar cheese
3 bacon slices, cooked and crumbled
 

Instructions
Melt butter in 10 inch (ovenproof) skilled over medium heat. Add potatoes and cook 10 minutes. Stir together eggs, milk, seasoning, and pour over potatoes.
Cook until set, covering if necessary or put in a 350 degree oven for 10-15 minutes. Remove from heat, sprinkle with cheese and bacon. Cover and let stand 5 minutes.
Serving Suggestions
Serve with fresh fruit and bread of your choice
