     Raisin buns

Category   Desserts - Breads
Sub Category   None
Servings   30

Ingredients
50g yeast
125g butter
500ml milk
1 egg
150ml sugar
2.5ts cardamomme (ground)
1.5liters flour
200ml raisins
1 egg and a little milk for coating

Instructions
Leave the yeast in a bowl and melt the butter. Mix the milk with the butter and heat it until it reaches 37C. Slowly mix it with the yeast, and then mix in the sugar, cardamomme and the egg. Little by little, add in the flour. leave the dough to set for 1 hour.
Empty the dough on a flat surface and knead it smooth. Divide the dough into 30 parts. For each part, put as many raisins as you'd like (I usually go for 6-7), and roll it together so the raisins are evenly distributed in the dough. Put them on a baking tray (10 per tray) and let them set again.
For a nice result, put the tray over a water bath and you'll see a nice result after 15 minutes.
Whisk the egg with a fork and add in a little milk. Once the buns are done, coat them with the mixture and leave in the oven for 10-15 minutes at 200C.
