     Cilantro Salmon

Ingredients
11-12oz raw salmon (should yield two 5-oz cooked servings)
1 cup yellow bell peppers
1 cup red bell peppers
1 cup green bell peppers
1.5 cups fresh cilantro
1 TBSP fresh lemon
.5 tsp cumin
.25 cup water
1 TBSP hot red pepper sauce (I used cholula)
 
.25 tsp salt

Instructions
1. Put the last 6 ingredients in a food processor. Puree, and put into a large ziplock sandwich bag. Put the salmon (or other fish you choose) into the bag and put in the fridge to marinate for a couple hours. Turn bag occasionally.
2. Preheat oven to 400 degrees. Spray square baking dish with Pam, and lay out pepper slices in a single layer. Bake for 20 minutes
. Place marinated fish over peppers, discarding the marinade. Cook for 12-14 minutes, turning the fish once. Fish should flake easily with fork.
Serving Suggestions
Each serving is 1 lean, 3 greens, and some condiments
