     Crooked Lake Caviar

Ingredients
1-14.5 oz can black beans, drained
1-14.5oz can black-eyed peas, drained
1-14.5oz can white shoepeg corn, drained
1 cup chopped orange pepper
1 cup chopped celery
1/2 cup chopped onion
1 small package peanuts, chopped
Jalapenos (optional)
 
Marinade-
1 cup salad oil
1/2 cup cider vinegar
1/2 tsp salt
1/4 tsp pepper
1/2 cup sugar (I use 1/4 cup though)

Instructions
In a large bowl, combine main ingredients. In a small sauce pan, combine marinade ingredients and boil a few minutes, until sugar is dissolved. Let cool. Combine all ingredients, cover and refrigerate overnight. Drain well before serving. Serve with Frito Scoop chips or eat with a spoon.
