Mix egg white with one tablespoon water. Whisk unti frothy. Add nuts to egg white mixture. Stir until all the nuts are well coated with the egg white mixture. Mix cinnamon and sugar together. Then dump the cinnamon and sugar mixture into the nuts and stir well to coat nuts. Put into large flat, buttered pan, so that the nuts are one layer thick. Make sure to spread them out! Bake approximately 1 hour at 250 degrees. STIR EVERY 15 MINUTES. They are done, when they seem nice and dry. Remove nuts into another flat pan - spread them out to cool. I remove them from the baking pan with a slotted spoon so that the excess cinnamon and sugar stays in the baking pan and not in the cooling pan. Make sure that the nuts are completely cool, before storing!
