1 can (2.5 oz.) sliced ripe olives, drained, divided
small bag hormell mini pepperoni rounds (or cut up log into bite sized chuncks)
1 tsp garlic powder
1 tsp italian seasoning
1/8 tsp crushed red pepper flakes
Assorted crackers or crusty bread for dipping
Instructions
In a large bowl, combine the ricotta, mayo, 1 cup mozzarella, and parm cheeses along with 1/2 of the diced tomatoes and about half of the olives. Add the pepperoni and spices. Mix
Spread mixture into a pie plate or other baking dish coated with cooking spray. Sprinkle with remaining mozzarella cheese.
Bake at 350 degrees for 30 minutes or until edges are bubbly and top is golden brown. Sprinkle with remaining tomatoes and olives before serving.
