Ingredients
4 rolls
2 oz. ham
4 eggs
6 cloves garlic
1/2 Tbls. paprika
1/4 cup olive or canola oil
1/2 tsp. salt
4 cups chicken broth or bouilon
mozzarella cheese
 

Instructions
Turn on oven to 400 degrees F. Place four soup bowls in oven to heat up. Heat oil in reasonably heavy sauce pan, add minced garlic, chopped ham, and paprrika. Saute until garlic is slightly brown. Add chicken broth, bring to a boil and simmer for a few minutes, longer won't hurt. Toast sufficient thin slices of rolls to cover soup bowls. Remove heated bowls from oven and place in a baking pan to facilitate handling of the heated bowls and keep the oven clean. Divde simmered mixture among the four bowls. Break an egg in each bowl. Place toasted sliced rolls on top of soup and mozzarella cheese on the rolls. Place the baking pan with the soup in oven and bake for three minutes, or a tad longer to make sure eggs are poached and the cheese is browned. Keep an eye on things or the cheese will blacken. Place each bowl on a cool plate, warn everybody the bowls are hot and serve.
Serving Suggestions
It's a one dish meal, but light years better with wam rolls, warm oil for dipping and a light Caesar Salad
