     Nana's Potato Soup

Ingredients
4 average white potatoes, cut into small cubes
1 onion, chopped
piece of ham, cut into small pieces
1/4 cup celery, cut up
1/4 cup green bell pepper, cut up fine
1 grated carrot
4 Tablespoons butter
5 Tablespoons flour
2 cups milk
 
1 cup sharp cheese, shredded

Instructions
Cook onions and ham in 2 Tablespoons veg oil in large pot over medium heat. When cooked, add celery and bell pepper and continue cooking until tender. Add water and potatoes and cook on medium-high heat until tender. Add more water, if needed. Mash the potato mixture. Add shredded carrot. Turn down to low.
Make a white sauce in seperate pot with the butter, and flour and milk over medium heat. When thickened, add cheese and stir until cheese is melted. Add sauce to potato mixture and adjust thickening with extra milk.
Add salt and pepper to taste. For more flavor you can add green onion tops and chopped parsley. Let simmer 15 minutes.
