     Chicken in Phyllo

Ingredients
6 tablespoons butter
1 cup broccoli florets, cut small
2 small onions, diced
1 cup mushrooms, sliced
1 cup zucchini, diced
1 pound boneless chicken breast, diced and cooked
1/2 pound cooked ham, diced
2 cups cheddar cheese, grated
dash curry powder
 
1 teaspoon basil, pinch thyme, salt and pepper to taste
phyllo pastry
Amaretto Sauce (see recipe below)

Instructions
Melt butter in medium skillet. Saute broccoli, onions, jushrooms, and zucchini over medium heat until just tender. Stir in chicken and ham. Remove from heat and add cheese and spices. Mix well.
Cut phyllo into half sheets. Use 4-5 half sheets for each serving. Butter each sheet and stack. Place about 1/2 cup of mixture on each stack. Fold into packets and seal. Preheat oven to 400 degrees. Bake for about 10 minutes or until golden brown and puffed.
SAUCE- 1/2 stick butter, 1 cup mushrooms, sliced, 1/4 cup amaretto, 1 tablespoon tarragon, fresh, 1/2 cup onion, minced, 2 tablespoons flour, 2 cups half and half, Salt and pepper to taste.
Melt butter. Add flour and stir until mixed. Slowly add half and half. Cook stirring constantly, over low heat until thickened. Add all other ingredients. Serve alongside phyllo packets.
Serving Suggestions
You may substitute cooked shrimp for the chicken.
