      Mulligan Soup

Ingredients
1 T butter
1 c each chopped celery onions carrots
1 clove garlic minced
4 boneless skinless chiken breasts cut into cubes
2 tsp curry powder
1 tsp chili powder
1/2 tsp ground cummin
3 whole cloves
6 cup chiken broth
 
1 can 19 oz plum tomatoes drained and cut up
1/2 c uncooked long grain white rice
1 tsp salt
1/2 tsp pepper
2 c peeled cored diced granny smith apples
1/4 c fresh parsely
3/4 c yogurt or sour cream
1 t lemon juice

Instructions
Melt butter over med high heat. Add celery onions carrots and garlic. Cook 3-4min. Add chiken. Cook till no longer pink. Add curry chili cummin and cloves. Cook and stir 2 more min. Add broth tomatoes rice salt pepper. Bring to a boil. Reduce heat to med low. Cover and simmer for 15 min. Add Apples and parsely. Simmer 10 min more. Remove from heat and stir in yogurt and lemon juice.
