     Tuna Salad

1 can white kidney beans drained and rinsed
1 can water packed tuna
2 c diced tomatoes
1/2 c minced red onions
2 T minced fresh basil or mint leaves
1 T olive oil
2 tsp each red wine vinegar and lemon juice
1 tsp sugar
1 clove garlic minced
1/2 tsp Dijon mustard
1/4 tsp each salt and pepper

In a lg bowl combine beans tuna tomatoes red onions and basil. Stir gently to avoid smashing the beans.
Whisk together remaining ingredients and pour over the beans. May be served room temp or chilled. We like on a bed of mixed greens.
Serves 4 222 cal 27 carb 7.1 fiber
