4 (4 oz) boneless center cut loin chops (1/2 inch thick)
1/4 tea salt
1/4 teaspoon freshly ground pepper
2 garlic cloves, minced
1/4 cup white wine
2 tbsp fresh lemon juice
1 teas grated lemon rind
2 tbsp chopped fresh flat-leaf parsley
1 tbsp capers, drained
Instructions
1. Heat oil in a large nonstick skillet over medium high heat. Sprinkle pork with salt and pepper. Add pork to pan; cook 4 to 5 minutes on each side or until done. Remove from pan and keep warm.
2. Add garlic to pan; cook 30 seconds. Add wine; cook 15 minutes, stirring constantly to loosen browned bits from bottom of the pan. Stir in lemon juice. Return pork to pan, and sprinkle with lemon rind, parsley, and capers. Serve immediately.

Serving size- 1 pork chop and about 2 tbsp sauce.
