     Spinach and Tuna Nicoise Salad

Ingredients
1 (12 oz) package pretrimmed fresh green beans
4 small red potatoes (about 8 oz)
4 precooked peeled eggs
2 (4 oz) packages lemon and cracked pepper flavored tuna fillets, drained
3 tbsp Dijon mustard
2 tbsp olive oil
2 tbsp white wine vinegar
2 tbsp chopped fresh tarragon
1 (6oz) package fresh baby spinach
 
16 grape tomatoes
1/3 cup sliced green onions
2 teas capers

Instructions
1. Place unopened package of green beans in the center of a microwave safe platter; arrange potatoes around edges of platter. Microwave green beans according to package directions; remove beans from package, and immediately plunge into a bowl of ice water. Microwave potatoes at HIGH 1 additional minute or until tender. Plunge potatoes into ice water with beans; let stand 5 minutes or until cold. Drain. Cut into quarters. 2. Cut eggs in half lengthwise; remove and reserve 2 eggs yolks for another use. Coarsely chop remaining egg yolks and egg whites. Separate fish into large chunks using a fork.
3. Combine mustard and next 3 ingredients in a small bowl, stirring with a whisk. 4. Divide spinach evenly among 4 plates; top spinach evenly with fish, greens, potatoes, and tomatoes. Sprinkle each salad with green onions, capers,and chopped egg. Drizzle salads with dressing.
