CHOCOLATE GANACHE
3 tbs heavy cream
1/2 cup bittersweet chocolate chip
|

bake 375. Prep whoopie pie pan or baking mat on sheet pan.
Sift dry ingredients. Beat butter, sugar, yolks, vanilla about 2 minutes, then add dry in 3 additions and milk in 2 additions.Beat well after each addition.
Drop dough into pan or on baking mat place 3 inches apart. Bake 8 to 10 minutes.

Filling
Whisk evaporated milk, yolks, vanilla in heavy sauce pan. Whisk in sugar and pinch of salt. Add butter. Stir constantly over med. heat until mixture thickens and turns golden thermometer should read 175 to 178, 8 to 10 minutes. DO NOT BOIL. Remove from heat and add coconut and nuts. Transfer to bowl and cool.

GANACHE
Simmer cream in heavy saucpan. Remove from heat add chocolate chips, whisk until melted and smooth. Cool ganache until luke warm and spreadable.
Assemble the pies.
