     Rhubarb Cake

1/2 tsp salt
1 1/2 cups brown sugar
1/2 cup butter or margarine
1 egg
1 cup sour milk (almost 1 cup with vinegar added to make 1 cup)
2 cups flour
1tsp baking soda
1 tsp baking powder
1 tsp vanilla
1 1/2 cups rhubarb, cut small
1 cup white sugar
1 tsp cinnamon

Preheat oven to 300 degrees F.
Cream salt, brown sugar and butter. Beat in egg. Stir in sour milk. Add dry ingredients, mix well. Add vanilla and rhubarb. Spread in greased 9 by 13 inch glass pan. Cover with topping. Bake for 45 minutes at 300 degrees. When cake rises heat to 325 degrees, then for last few minutes raise to 350 degrees.
