     Fake (orzo) Risotto with Artichokes and capers

Ingredients
3/4 C Olive Oil
1 Lg Onion - diced small
3 Cloves Garlic - minced
1 Tbls dried Basil
1 Tbls dried Oregeno
1 Tbls Garlic powder
1 Tbls Onion Powder
1 Tbls Paprika
1 Tbls Complete Seasoning
 
1 Tbls Capers
3 C hot water
2 C chicken stock
1 can Artichoke hearts in water- drain and chopped into small pieces
1 Lbs Orzo pasta uncooked
2 lemons - juiced
2 Limes - juiced
1/2 bunch parsley - chopped fine

Instructions
In a small bowl mix all ingredient except Artichokes and Orzo Set aside and let sit for 1 hour - this lets the flavor soak into onions and garlic Heat a large skillet on med height heat When hot pour in the above mixture into hot pan. Cook on high for about 7-10 mins, stirring constantly. Now add the pound of orzo. Mix well. Keep stirring the orzo for about 3 mins to let it toast a bit. Poor in 1 cup of water and let it cook down until liquid is almost gone- stirring Poor in 1 more cup of water and let it cook down again. - stirring
Now add last 2 cps of water and 1 cup of chicken stock. Bring to a boil and reduce to a low simmer and cover. . Stirring every few mins so it does not stick. Taste it. Re adjust seasoning if needed. Now add 2nd cup of chicken stock if needed. If orzo is still not cooked continue to add water until its soft and creamy. Check seasoning if you add more liquid When orzo is cooked add lemon and lime juice. Mix well add Articokes mix and heat for 2-3 mins. Transfer to plates and garnish with parsely
