     Oatmeal Muffins

Ingredients
6 pkts. oatmeal - any flavor
1 1/2 t. baking soda
3/4 t. baking powder
cinnamon (optional)
2 C. water
2 T. white vinegar
1 t. vanilla (optional)
 

Instructions
Preheat oven to 350. Spray 12 cup muffin tin with Pam. Get out all ingredients so you can work quickly. Mix dry ingredients together in a bowl. Mix wet ingredients together in a measuring cup.
Working quickly, mix dry and wet ingredients together. Chop around to remove lumps. Work quickly so bubbles don't all go away. Spoon into 12 muffin tins. Bake 12 minutes. Cool in muffin pan. Use a table knife to help remove muffins from pan. Finish cooling on cooling rack. Store in large baggie in refrigerator.
Serving Suggestions
2 muffins= 1 MF meal 1 -2 condiments
