     Oatmeal Cream Pies

Ingredients
1 1/4 cup softened butter
1 cup brown sugar
1/2 cup sugar
1 1/2 cup flour
3 cup oats
1 egg
2 teaspoon vanilla
1 teaspoon soda
1/2 teaspoon salt
 
1/4 teaspoon cinnamon
Cream Filling~~~
1/2 cup softened butter
2 cup powdered sugar
2 teaspoon whipping cream

Instructions
Cookies- Preheat oven to 375. Cream the butter. Add white and brown sugar, cream. Add vanilla and egg and continue mixing ingredients. In separate bowl, mix all the dry ingredients together, and then add oats to dry ingredients. Gradually add this mixture to the mixing bowl, and mix until combined. Scoop dough onto baking sheet lined with parchment paper. Bake at 375 for 10 minutes. Take out of oven and leave on pan for 2 minutes to cool (and continue baking), and then transfer to cooling rack. Let cool completely!
Filling- Cream the butter. Sift powdered sugar, and add to butter. Add vanilla and whipping cream, mix on medium speed until combined. Turn mixer on high and whip filling for about 2 minutes until fluffy.
Spread filling between two cookies, and enjoy!
