Bring 2 inches water to a boil in deep skillet or large saucepan. Place 4 small cups on work surface. Crack 4 eggs, one into each cup.
Holding one cup close to surface of simmering water, slip egg into water. Repeat immediately with remaining eggs. Simmer until egg whites are set and yolks begin to thicken but are not hard, 3-5 minutes.
With slotted spoon, carefully remove eggs, one at a time, and briefly drain (still in spoon) on paper towels. Place 1 egg on each of 4 plates, sprinkle evenly with 1/4 tsp salt and 1/4 tsp black pepper.
Use very fresh eggs, keep water at a simmer and don't stir water1
