Combine 1st 3 ingredients and beat until mixture is lemon-colored
Combine the flour and salt and combine the buttermilk and baking soda. Add the two mixtures alternately to the egg mixture.
Add cereal and refrigerate for at least 6 hours.
Fill muffin cups 2/3 full (either grease the muffin pan or use liners). Bake at 400 degrees for 15-20 min.
