     Classic Beef Meatballs

Ingredients
2 tablespoons extra virgin olive oil
2 pounds ground chuck
1 cup ricotta cheese
2 large eggs
1/2 cup fresh parsley, chopped
1 teaspoon dried oregano
2 teaspoons kosher salt
12 teaspoon crushed red pepper flakes
1/2 teaspoon gound fennel
 
1 large yellow onion, finely diced
2 15-ounce cans tomato sauce or
Marinara sauce (see recipe)

Instructions
Preheat oven to 450 degrees. Drizzle olive oil into a 9x13 baking dish and use your fingers to evenly coat the entire surface. Combine other 9 ingredients in large mixing bowl. Mix by hand until thoroughly incorporated.
Roll mixture into 1 1/2 inch balls and place side by side in baking dish. Roast for 30-25 minutes. If you are serving with marinara sauce, add to simmering sauce for 5-7 minutes. If not, drain excess grease from baking dish and pour 2 cans tomato sauce over. Bake for 15 minutes.
