Ingredients
4 carrots
1 tsp butter
1 tsp sugar
Salt
1 day-old white bread roll
2 onions
2 tbsps finely chopped parsley
20 ounces mixed ground beef and pork
1 egg
 
Pepper
2 tbsps chopped thyme
2 hard-boiled eggs

Instructions
Peel the carrots. Wash and slice them. Cook in water with butter, sugar, and a little salt for about 15mins until tender. Drain and put aside. Preheat oven to 350 degrees. Soak the bread roll in a little warm water until soft, and then squeeze out the excess water. Chop into small pieces. Peel onions, chop finely and place into a bowl with ground meat, beaten egg, chopped soft bread roll, salt, pepper and chopped thyme.
Grease a baking tin and half-fill with ground meat mixture. Place peeled hard-boiled eggs and cooked carrots on top and then fill with the remaining mixture. Bake meatloaf about 1 hour or until ground meat is cooked through.
