Arrange rice, lettuce, carrots, cilantro, scallions and radishes on a serving platter.

Heat grill or broiler. Thread 2 patties lengthwise on each skewer. Grill or broil 10 to 12
minutes, turning to brown all sides, until cooked through and a meat thermometer
inserted in center registers 160F. Add skewers to platter.
To eat, open lettuce leaf, spoon on a little rice, then some of the carrots, cilantro,
scallions, radishes and a hot meat patty. Wrap leaf around filling; dip lettuce roll in
sauce.
