     Baked tomatoes

2 very large tomatoes, 3-4 inch in diameter
4 tbsp plain bread crumbs
1 clove garlic, finely chopped
1 tbsp chopped parsley
2 tbsp butter, melted
salt & pepper to taste
1/2 fresh lemon

Slice tomatoes in half, sprinkle with salt & pepper & set aside. Combine bread crumbs, garlic, parsley & melted butter. Remove seeds from tomatoes leaving as much tomato as possible. Gently add bread crumb mixture to each tomato half & add a few drops of lemon juice to each. Bake in pre-heated 350 oven for 15-20 minutes. This is one ofmy Mother-in-law's (Irene Brown) recipes. She was always trying different things.
