Sauce •In hot oil in 6 quart pan saute onion & garlic until brown, about 10 minutes. Add undiluted tomatoes, tomato paste, 1 Y2 c water, 2 tbsp parsley, 1 tbsp salt, sugar, oregano, basil & 1/4 tsp pepper. Mix well mashing tomatoes with fork. Simmer covered, stirring occasionally, 1 hour. Pre-heat oven to 350. Cook ziti by directions.

In large bowl combine ricotta or cottage cheese, mozzarella, 1/3 c Parmesan, eggs, parsley, salt & pepper. Beat with wooden spoon until blended. Spoon a little sauce into a 5 qt casserole dish. Layer 1/3 of the ziti, 1/3 cheese sauce, sprinkle with Parmesan cheese. Repeat layers 2 more times. Bake uncovered for 45 minutes or until bubbling in center. This is one of my favorite casseroles. I an gonna make it for the people here at one of the monthly covered dish dinners.
