     Pani puri

Ingredients
30 hard puris (available ready-made)
Sweet chutney (from dates and tamarind)
Spicy chutney (from green chillies and coconut)
100g boondi (small fried gram flour balls)
3 large potatoes (mashed)
1 large onion (chopped)
100g dark chick peas (yellow gram)
1/2 litre water
 

Instructions
1. Make a hole in each puri. 2. Add the mashed potato into the puris.
3. Mix the spicy chutney with water. 4. Add the chick peas into each puri followed by boondi.
5. Just before serving, add the sweet chutney and then the spicy chutney water. 6. Top the puri with chopped onion and serve.
Note- Sweet chutney is made of equal quantities of dates, tamarind and water as per consistency. Spicy chutney is made of- 2 bunches corriander 10g green chillies 100g grated coconut Salt to taste water as per consistency
Serving Suggestions
Make pani puri just before it is served, or it becomes soggy.
