Put flour, salt and sugar in a mixing bowl. Cut lard into small pieces into the flour mixture.

Use fingers to quickly blend together until lard mixes in small, pea-sized pieces. Add water and mix thoroughly with a fork until you can make it into a small ball with your hands. It should be moist, but not too wet; if water is added, add 1 tbsp at a time.

Cut ball into two halves, with one side a little bigger than the other. Put flour on hands and table. Form one of the halves into a disc shape. Place on table and slowly roll out with rolling pin, turning over often and adding flour as needed, until stretched to fit pie plate.

Place in 9-inch pie plate. Add filling. Roll out other half of dough until bog enough to cover pie. Place on top of pie. Cut crust so it hangs 1/4-1/2 inch over the edge of the pie plate. Tuck crust under, but inside plate. Use fingers or a fork to pinch crusts closed.
