On stovetop, heat garlic and oil. Add chicken and cook about half
way done. Add jar of salsa, reduce heat slightly, and cover. If you
are using the black beans, you would add at this time. Cook until
chicken is done. Add a few handfuls of cheddar cheese and heat
until melted. Serve over rice. The basic version mentioned above
is healthy, but it can be topped with sour cream, avocado,
jalapeños for a more Mexican dish.
