     CARROT CAKE

Ingredients
1 1/2 C mazola oil
2 c sugar
4 eggs
2 c carrots (grated fine)
3 c flour
2 tsp baking powder
2 tsp cinnamon
1/4 tsp salt
1 1/2 c chopped nuts
 
1 tsp baking soda
1 tsp vanilla (opt) (I use)

Instructions
Beat oil & sugar. Add eggs. Blend in carrots. Sift all dry ingredients together & add to mixture. Mix on no.3 speed of mixer until well blended. Blend in nuts with spoon. Bake in an ungreased angel food pan (large) 1 hour & 15 minutes at 350 degrees. I worked at Bussman Fuse in St. Louis when I got this recipe.
