     RASPBERRY CHICKEN

Ingredients
2 CHICKEN LEG QUARTERS 0R 2 CHICKEN BREAST
1/4 TEASPOON SALT
1/3 TEASPOON BLACK PEPPER
1 TABLESPOON MELTED MARGARINE
1/4 CUP SEEDLESS RED RASPBERRY JAM
1 TABLESPOON BALSAMIC VINEGAR
1 AND 1/2 TEASPOON SOY SAUCE
1/8 TEASPOON CRUSHED RED PEPPER
 

Instructions
PREHEAT OVEN TO 375 DEGREES F. COAT A SMALL BAKING DISH WITH NON STICK SPRAY. PLACE CHICKEN IN DISH AND SPRINKLE WITH SALT AND PEPPER, THEN DRIZZLE WITH MELTED BUTTER. BAKE FOR 45-50 MINUTES, OR UNTIL DONE. IN A SMALL PAN, COMBINE REMAINING INGREDIENTS. MIX WELL AND COOK OVER MEDIUM HEAT FOR 1 MINUTE. REMOVE CHICKEN FROM PAN PLACE ON THE SERVING PLATTER. TOP WITH THE SAUCE AND SERVE.

serve with a cuccumber salad and potatoes and creamed peas and a light dessert.
