     Broiled Tomatoes

Ingredients
2 tbsp panko breadcrumbs
1 tbsp grated parmesan cheese
1 tsp italian seasoning
1/2 tsp salt
4 ripe red and/or yellow tomatoes, cored and cut in half lengthwise
4 tsp olive oil
 

Instructions
1. Mix breadcrumbs, cheese, and seasonings in small bowl. 2. Sprinkle cut side of each tomato half with breadcrumb mixture (about 1 1/2 tsp on each half). Drizzle each with 1/2 tsp olive oil and place cut side up on foil lined broiler pan. 3. Broil under preheated broiler 4 minutes or until tomatoes are hot and topping is brown and bubbly.
Variations Broiled green tomatoes Use green tomatoes in place of red or yellow tomatoes. Prepare as directed Spicy Broiled tomatoes Add 1/4 tsp crushed red pepper to seasonings. Prepare as directed. Broiled tomatoes with thyme Replace the Italian seasoning with thyme. Prepare as directed.
