Combine cheese and butter in a heavy saucepan over low heat until soft and well blended. Add powdered sugar and stir until well combined. Add your choice of extract and coloring. Roll into 1-inch balls and place on wax paper sheets. Press with a fork or decorative stamp. Let stand, uncovered 4 hours or overnight. You want the mints to be firm and dry on the outside and have a moist creamy inside.
