     Eggless Spinach Souffle

Ingredients
1 Tbsp Olive Oil
6 cloves Garlic, chopped
1 cup White Onion, minced
2 - 10 ounce packages Chopped Spinach, thawed and well drained
1 cup Dannon Plain Yogurt
4 ounces Goat Cheese
Salt & Pepper to taste
 

Instructions
In a large skillet, heat up oil and add minced onions and garlic, dash of pepper, and a pinch of salt. Saute until tender, 2-3 minutes. Cool mixture slightly. In a large mixing bowl, combine spinach, yogurt, and goat cheese. Add mixture from skillet and blend well. Place in a lightly greased 8x8 baking pan and bake 15-20 minutes.
