1 cup fish stock (Remove skin and bones from fish, add water and boil a few minutes.)
1/2 cup cream
salt
pepper
paprika
6 TBSP grated cheese
Instructions
Heat oven to 350 degrees. Season fish on both sides with salt, pepper, and paprika and place on baking dish.
Make sauce of the butter, flour, fish stock and cream. Season with salt and pepper. Add sherry. Pour over halibut. Bake 30 minutes. Take from oven 5 minutes before done and spread with cheese. Return to oven for 5 minutes.
