     Crusty Wheat Bread

In Bosch mixer combine-
2 c whole wheat flour
4 1/2 t rapid-rise yeast
1/4 c sugar
2 1/2 c hot water (125 degrees)
Blend well then rest 10 min
Add 2 c whole wheat flour
1 c all purpose flour
2 t salt
1/3 c oil

Jog to blend all ingredients. Mix on low speed of Bosch mixer for 4 min, adding up to 1/2 c more whole wheat flour as need until dough pulls away from the sides of the mixer. (dough should be fairly sticky)
Spray the insides of two loaf pans (81/2x4 1/2x 2 1/2) with vegetable oil spray. Also spray a small area on the counter and your hands. Turn dough out onto the counter. n nDivide in two and form loaves. Place loaves in pans, cut a slit in the top of the loaves with a sharp knife or razor blade and let rise covered for about 30 min. until it doubles.
Bake on bottom rack of 400 degree oven for 25 min. When done, remove from oven, brush tops with butter and turn out on racks to cool. If loaves brown too quickly place aluminum foil over them for the last 10 min.
Serving Suggestions
Variations- as flax seed, sesame seeds, sunflower seeds or rolled oats (1/4 - 1/2 c max.)
