Preheat oven to 400 degrees. Line a baking pan or jelly roll pan with foil; spray foil with vegetable cooking spray/. Set aside. Place the dry mustard in a small bowl and stir in vinegar. Add honey, shallot, dijon mustard, thyme, and oregano. Mix well and set aside. Place the chicken breasts in prepared pan. brush with half of the honey mustard glaze. bake for 10 minuets. Remove pan from the oven. using tongs, turn chicken breasts over and brush with the remaining glaze. Return pan to the oven and bake until juices run clear with meat is pierced with a knife, about 10 minutes. Slice chicken breasts and place on individual serving plates. Serve immediately.
