     Irish stew

Ingredients
2 tbls. oil
2 lbs. beef shoulder (cut into cubes)
salt and pepper to taste
2 large potatoes, peeled and cubes
1 onion, chopped
2 carrots, peeled and sliced
1/2 tsp. thyme
 

Instructions
Heat oil and cook meat with salt and pepper until browned. Add water to cover meat and bring to a boil. Cover and reduce heat, simmer about 45 minutes. Add veggies and thyme, cover and simmer until veggies are tender, about 30 minutes. Can be thinkened with flour if needed for a thicker gravy.
