     West Virginia Healthy Cornbread

1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1 1/2 cups grated zucchini
3 eggs, beaten
1 tablespoon sugar
3/4 cup cottage cheese
1 stick margarine, melted
3 tablespoons margarine (to coat the skillet)

In a large bowl, mix all ingredients, adding stick of melted margarine last. Preheat oven to 375 degrees. Melt 3 tablespoons margarine in an 8-inch iron skillet. When hot and bubbly, add cornbread mixture and bake 40-45 minutes. Sprread top with soft margarine, if desired.
Cut into 6 or 8 delicious slices.
Serving Suggestions
Unbelievably yummy, just don't tell the kids what's in it.
