     Grilled Trout Sandwiches

Ingredients
2 pounds fresh trout fillets
Extra virgin olive oil
Kosher salt
Freshly ground pepper
Vinaigrette salad dressing
Fresh rolls
Fresh basil leaves
 

Instructions
To prepare the trout, heat coals in an outdoor grill and brush the top of the grill with oil. Rub the trout with olive oil, salt, and pepper to taste. Grill for about 5 minutes on each side, or until the trout is flaky. Place a fillet on the bottom half of a roll and garnish with basil and your favorite vinaigrette salad dressing.
