     Mango Bread

Ingredients
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 1/2 cups sugar
1/2 teaspoon salt
3 eggs, lightly beaten
1 teaspoon vanilla
1 cup salad oil
2 cups mango, diced
 
1/2 cup walnuts, chopped

Instructions
Sift together the flour, cinnamon, baking soad, sugar and salt. Add the flour mixture to the rest of the ingredients which have been well mixed. Lightly butter 4 small loaf pans or 2 large. Preheat oven to 350 degrees. Bake for 55 minutes (1 hour and 5 minutes for larger pans).
Cool and serve or wrap in foil and freeze.
Serving Suggestions
Great with a cup of tea on a cool day.
