     Spinach Ravioli

Ingredients
1 tablespoon salt
3 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
10-ounce bag fresh spinach
16-ounce bag frozen or refrigerated ravioli (or tortellini)
1/2 cup Parmesan or Romano cheese
 

Instructions
Bring a large pot of water to a boil with 2 teaspoons of salt. As the water is heating, put the olive oil in a wide skillet over medium high heat. Mince the garlic and add it to the olive oil along with the red pepper. Cook just until the garlic is aromatic. Add the spinach to the pan and cook 3 or 4 minutes, stirring occasionally, until it is limp and vivid green. Add salt and pepper as it cooks.
When the water boils, add the ravioli or tortellini and cook according to package directions or to desired doneness. Drain when cooked and toss with spinach. Serve in deep bowls with coarsely grated cheese on the top.
Serves two adults and two children with moderate appetites. If you have teenagers, you’ll need to double the recipe.
