     Chicken Supreme

Ingredients
6 boneless, skinless chicken breasts (pounded to even thickness)
1/2 c. Bisquick mix
Salt and pepper to taste
1/2 t. Montreal chicken seasoning (optional) (garlic power, salt and pepper will be a good sub)
2 T. butter and 2 T. olive oil
2 cans of cream of mushroom soup
3/4 cup dry sherry or sherry cooking wine (essential ingredient)
2 c. sour cream
1 small can of mushrooms
 
1/2 bunch of fresh asparagus, cut into 1-inch pieces

Instructions
Mix Bisquick, salt and pepper and montreal seasoning a shallow dish. heat oil and butter ina large fry pan over medium high heat. Dredge chicken breasts in the mixture. Pan fry the chicken in batches (do not crowd) until just golden. Place chicken in a pammed 9X13 inch baking dish. mix the soup, sherry, sour cream, mushrooms and asparagus. Pour over the chicken. Bake 1 hour uncovered in a 475 degree oven. Serve with rice or potatoes. It makes great gravy.
