     Apple Streusel Muffins

1 1/2 cups flour
1/4 cup sigar
2 tspn baking powder
1/2 tspn cinnamon
1/4 tspn salt
1/8 tspn nutmeg
1 egg
1/2 cup milk
1/4 cup vegetable oil
1 cup shredded apples
1/3 cup packed brown sugar
2 tspn flour
1/2 tspn cinnamon
2 tbsp butter, softened

In a large bowl, combined the flour, sugar, baking powder, cinnamon, salt, and nutmeg. In a small bowl, whisk the egg, milk, and oil. Stir into dry ingredients just until moistened. Fold in apple. In another small bowl, combine topping ingredients. Set aside 3 tbsp of topping. Spoon half of the batter into 12 greased muffin cups. Sprinkle with the remaining topping. COver with enough batter to fill muffin cup 2/3 full. Sprinkle with reserved topping. Bake at 400 degrees for 20-25 min. Cool for 5 min before removing from pan to a wire rack.
