Cut sausages into 1/4 inch pieces. Heat skillet with olive oil.
Cook sausages until heated through, transfer to paper towel to
drain. Add onion and garlic to skillet. Stir in herbs, bay leaf,
scallions or parsley, tomatoes and salt and pepper to taste. Boil
for 5 minutes. Add sausages and beans to mixture, cook 10
minutes. Discard bay leaf. Top with croutons and parmesan
cheese.
