     White Bean and Sausage Cassoulet

Ingredients
1 package Cooked Smoked Turkey Sausage
3 Hotlink Sausages
1 teaspoon Olive Oil
2 medium Onions
2 Garlic Cloves
3/4 teaspoon Mixed Dried Herbs
1 Bay Leaf
1/2 cup Chopped Scallions or Parsley
1 can Diced Tomatoes with Chiles, with juice
 
1 can White Beans
Croutons
Parmesan Cheese

Instructions
Cut sausages into 1/4 inch pieces. Heat skillet with olive oil. Cook sausages until heated through, transfer to paper towel to drain. Add onion and garlic to skillet. Stir in herbs, bay leaf, scallions or parsley, tomatoes and salt and pepper to taste. Boil for 5 minutes. Add sausages and beans to mixture, cook 10 minutes. Discard bay leaf. Top with croutons and parmesan cheese.
Serving Suggestions
Serve with rice or mashed potatoes
