     Wilted Spinach Salad w/ Chicken & Mandarin Oranges

Ingredients
4 boneless chicken breast halves
2 tbsp unsalted butter
2 tbsp vegetable oil
1 small red onion, sliced
1/4 cup red wine vinegar
8 cups baby spinach
1 11oz can mandarin orange sections
 

Instructions
Put oil and butter in pan. Add chicken and cook.
Saute onion. Add vinegar. Raise heat to high and boil until reduced, about 2 minutes. Reduce to medium heat. Add spinach and oranges. Saute unti spinach has wilted, about 1 minute. Season with salt and pepper.
Slice chicken. Divid spinach mixture among 4 plates. Serve with chicken.
