1 pound pasta
1 cup part-skim ricotta (cheese)
1/4 cups crumbled feta cheese
1/2 teaspoon(s) freshly grated lemon peel
1/4 teaspoon(s) salt
1/4 teaspoon(s) freshly ground black pepper
1/2 cup(s) loosely packed fresh parsley leaves, chopped
1/2 cup(s) loosely packed fresh mint leaves, chopped
1/2 cup(s) loosely packed fresh basil leaves, chopped
4 plum tomatoes, chopped

Heat a large coverd saucepot of salted water on boliong high. Cook pasta as label directions
Meanwhile, in bowl, combine ricotta, feta, lemon peel, salt, and black pepper
3.Reserve 1/3 cup pasta cooking water. Drain pasta and return to saucepot. Stir reserved cooking water into ricotta mixture; toss with pasta to coat. Stir in herbs and chopped tomatoes.
