     Cream of Asparagus Soup

Ingredients
4 lb asparagus, ends saved for juicing
2 white onions, chopped
4 cloves garlic, cut in half lenghtwise
8 ounces silken tofu
16 ounces vegie broth
salt and pepper to taste
pan spray
 

Instructions
Pan spray a cookie sheet and place onion and garlic on it in a 400 degree oven until onion starts to bronw at the edges. Place asparagus spears in a lasagna pan, spray with pan spray, sprinkle on salt. Add to oven and roast until spears begin to brown.
Add half the onion and garlic, half the asparagus, half the tofu, and half the vegie broth to a blender and puree until smooth. Add the remaining onion, garlic, asparagus, tofu, and broth and puree until smooth. Taste and season with salt and pepper.
Good served hot or cold.
Can be dressed up with toasted pine nuts, asparagus tips, or toasted slivered almonds when served.
