In a large bowl, combine flour, baking powder, and salt; mix well. In a medium bowl, combine applesauce, granulated sugar, egg whites, vanilla, and remaining pineapple juice; mix well. Using an electric mixer on medium speed, beat applesauce mixture into flour mixture until smooth. Pour batter over pineapple rings in prepared pan. Bake until a toothpick inserted in center comes out clean, 30-35 minutes. Cool in pan.
