     CHICKEN AND SMOKED SAUSAGE SOUP

Ingredients
make the classic chicken soup
2 fully cooked italian chicken sausage link cut into 1/4 in. slices
1 small ead escarole (torn into 2-in pieces
15 oz can white beans (rinsed)
olive oil
 

Instructions
heat 1 tb olive oil in a large skillet over medium-high heat and brown the sausage 1to 2 minutes per side
add the sausage, escarole and white beans to the soup
simmer until the escarole is tender, 4 to 5 minutes
